‘Antique’ cuvéesThis wine is grown in our old vine parcels in 'Champ Gordé' situated on the Tracy-sur-Loire commune. I am particularly fond of this wine, the origins of which are close to those of this family owned wine domaine. The proximity of the Loire near our plots provides a unique micro-climate to the vines ! It's cool in summer and mild in winter ! For this cuvée, I wanted to repeat my grandfather's procedures by making an unclarified, slightly filtered wine.

Vinification
The grapes are from a careful selection of my Pouilly-Fumé old vines. All of my parcels receive the utmost care and attention prior to harvesting so as to enhance the smoky notes of the appellation and ensure optimum aromatic maturity. We make cold stabulation for 8 days before being fermented at controlled temperatures of l6-18 C in Burgundian barrels from the Bertranges forest.

Color:
Lemon yellow with green glimmers.
Nose:
The nose opens us with Japanese pear, green apple, white flowers, white peach and almond.
Palate:
The palate is silky and elegant. Notes of peach, nectarine, mango, candied pineapple and dried apricot are highlighted by spices. The finish is long and elegant, with delicate peppery notes.
Serving temperature
8 - 10 °C.
Food Pairings
Goats cheeses, Mont d'Or, seofood or a fillet of perch pike with seoweed and bamboo shoots.

Lovely lemon zest, minerals, herbs, green mango and flint on the nose. A medium-to full-bodied Pouilly-Fumé with quite uncompromising, mouthwatering acidity and freshness. I love the texture and the fine austerity here, inviting you to drink glass after glass. Enjoy now. |
